Mtabbal, also known as Baba Ghanouj, is a creamy Middle Eastern roasted eggplant dip blended with tahini, yogurt, garlic, and lemon. Think of it as hummus’s lighter and brighter cousin. In many Middle Eastern homes, it is an everyday staple served alongside grilled meats, rice dishes, fresh vegetables, or simply warm bread. It also appears on holiday tables and during big family gatherings. 
Traditionally, some people char the eggplants over an open flame to add a smoky depth. This easy oven-roasted version keeps things simple while still tasting nourishing and delicious. Eggplant provides fiber and antioxidants, tahini offers healthy fats, and yogurt adds protein, probiotics, and a refreshing tang. The result is a wholesome dip that brings both comfort and flavor to the table. 
You can also make this recipe vegan by skipping the yogurt while keeping it creamy and flavorful.

I love festive but simple-to-do, nutritious, delicious, and filling meals. I enjoy preparing this meal during wintertime. Perfect to share with family and friends, especially for special occasions. For the veggies, I used Brussels sprouts and a variety of small potatoes. Feel free to replace those veggies with others that you like. The salmon pairs well with a pesto sauce.
