Vegan Stuffed Grape Leaves

The more common version of this meal is made with white rice, minced meat, and several spices. For New Year’s Eve, I made a vegan version using brown Jasmine rice, hummus, herbs, and spices. This can be a time-consuming dish, but it is very rewarding and delicious. Perfect for cooking with family!

Ingredients
  •  1 lb. grape leaves (jar)
  • 3 bunches parsley
  • 2 bunches cilantro
  • 1 head garlic
  • 1 large onion
  • 1 Serrano pepper
  • 4 medium tomatoes
  • 1 can 15 oz. chickpeas
  • 2 cups brown Jasmine rice
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3/4 tsp allspice
  • 2 tsp nutritional yeast
  • 1/2 cup olive oil
  • 2 lemons
  • 3 1/2 cups water 
  • Topping:
  • 1 large tomato
  • 1/2 tsp allspice
  • 1/2 tsp nutritional yeast
  • 1/2 tsp red pepper flakes
Prep time: 2 hours
Cook time: 1 hour
Servings: 10

Directions
  • Drain and soak grape leaves in water
  • Pick and wash the parsley and cilantro, then mince
  • Peel and mince garlic
  • Chop onions in a small dice
  • Mince the Serrano pepper
  • Mix garlic, onion, and pepper and sauté for 5 minutes
  • Chop tomatoes in a small dice and set aside
  • Drain chickpeas, peel, and cut in half
  • Drain the grape leaves
  • Combine parsley, cilantro, garlic, onion, pepper, tomatoes, hummus, and rice in a bowl Season with salt, black pepper, allspice, nutritional yeast, olive oil, and lemon juice
  • Fill grape leaves with about 1 tsp of the mixture per leaf and wrap
  • Do the same for the rest of the grape leaves
  • Once complete, pack the rolled leaves tightly in a circular pattern in a 3.5-quart pot
  • For the topping, chop the tomato in a small dice
  • Add allspice and nutritional yeast to the tomato
  • Spread this over the grape leaves
  • Place a plate on top of grape leaves to prevent leaves from unraveling
  • Sprinkle red pepper flakes over the grape leaves
  • Add boiling water to the pot and cover
  • Once boiling, simmer for about 1 hour
  • Plates well with yogurt
