Bean-Loaded Sweet Potato

The bean mix is so versatile! Great on its own, on greens, or sweet potatoes as the reel shows!

Ingredients
  • One 13.4 oz cooked black beans
  • 2 green onions
  • 1 medium size tomato
  • 1 tbsp. extra virgin olive oil*
  • 1 tsp. balsamic vinegar
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 2 oz feta cheese
  • 6 cooked sweet potatoes
Prep Time: 15 min
Servings: ​6​
Directions
  • Open the beans package, strain them, & place 6 oz in a small bowl
  • Save the rest in a container in the refrigerator
  • Chop the onions and add to the bowl
  • Chop the tomato and add to the bowl
Make the Vinaigrette:
  • Mix the oil, vinegar, salt, and pepper
  • Drizzle the vinaigrette on the bowl
  • Mince the feta cheese & set aside
  • Cut open the potato lengthwise
  • Scoop some of the bean mixture on the potato
  • Garnish with feta cheese
