Roasted Sweet Potatoes

Nothing says fall more than the garnet and purple sweet potatoes! They are great additions to fall cooking especially Thanksgiving.

Orange sweet potatoes are one of the richest sources of beta-carotene, a carotenoid known for its ability to reduce cancer risk and eye health benefits! 

​Purple sweet potatoes are a good source of beta-carotene and a rich source of anthocyanin pigments, acting like antioxidants that help reduce inflammation and boost the immune system

Ingredients
  • ​​Sweet Potatoes
Cook Time: 1 hour​
Directions
  • Rinse potatoes and lay on an oven safe tray
  • Poke holes in potatoes using a fork or knife
  • Roast at 425 °F for 1 hour
Fun Fact: Purple sweet potatoes have three times more anthocyanins than the average blueberries!!!
