Veggie Egg Skillet

Sharing one of my family's favorite skillet meals. Love it because it is super easy, nutritious, and delicious. This recipe is definitely modifiable, the veggies listed are just a suggestion, usually, I use whatever I have on hand. For this skillet, I incorporated zucchini from my garden! Feel free to play around and add your favorite vegetables.

Ingredients

• 1 tbsp. avocado oil
• 1 large zucchini (cubed)
• 1 small onion (medium dice)
• 1 sweet pepper (medium dice)
• 1 cup shredded green cabbage
• 1 tomato (medium dice)
• 4 eggs
• 2 tbsp. crumbled goat cheese
• 1/2 serrano pepper sliced 
  (optional)
• 1 tbsp. cilantro (chopped)
• Salt and pepper to taste

Servings: 4
Prep Time: 10 min
​Cook Time: 17 min

Directions

• To a heated skillet, add the oil 
• Add the zucchini and sauté for 5 minutes
• Add the onion, sweet pepper, cabbage, and tomato, and sauté for 5 more minutes
• Crack the 4 eggs into the skillet and let them cook for 5-7 minutes
• Garnish with cheese, pepper, and cilantro
• Season with salt and pepper 
• Enjoy with your favorite whole grain bread
