Roasted Squash

Love making this super easy, delicious, and nutritious dish, especially during the summer time when I have fresh squashes from my garden. Goes well with any main entrée, or simply pair it with a garden salad for a light summer meal!

Ingredients
  •  1 yellow squash
  •  1 zucchini
  •  1 Tbsp. avocado oil
  •  ½ tsp. salt
  • ½ tsp. black pepper
  • 4 basil leaves (optional)

Prep Time: 10 min
Cook Time: 25 min
Servings: 4

Directions
  • Rinse squashes
  • Chop squashes into medium size cubes
  • Lay in a 13x9 oven safe dish
  • Drizzle with oil
  • Sprinkle salt and pepper
  • Mix well
  • Roast at 400 °F for 25 minutes
  • Chop basil & garnish before serving
