Quinoa Mujadara

Mujadara is a very popular Middle Eastern dish that is typically made with lentils, white rice or cracked wheat (less common), caramelized onions, a few spices & water. ​It is a nutritious, delicious, economical, & sustainable dish. 

The star of this dish is the lentils! Legumes such as lentils use fewer resources, build the soil & create affordable & incredibly healthy dishes. For a more nutrient-dense version of this dish, I’m replacing white rice with quinoa. Whenever I cooked & shared this dish with others they raved about its deliciousness!!!

Ingredients
  • 2-3 large onions
  • 4 tbsp. all-purpose flour
  • 6 tbsp. avocado oil
  • 1 cup green lentils
  • 1/3 cup quinoa
  • 3 cups boiling water
  • 1 tsp. ground cumin
  • 1 tsp. salt
  • 1/2 tsp. ground black pepper
Servings: 6
Prep Time: 15 min
Cook Time: 45 min

Directions
  • Peel & slice the onions (julienne cut)
  • In a bowl mix the onions and the flour
  • Heat a large pan, add the avocado oil, and sauté the onions
  • Keep stirring them until the onions caramelize (25-30 min.)
  • While the onions are caramelizing, look through the lentils to remove any small stones
  • Wash and strain the lentils and quinoa
  • Add the lentils and the quinoa to a pot with 3 cups of boiling water
  • Add cumin, salt, pepper, and a ½ cup of caramelized onions to the pot & stir
  • Bring the mixture to a boil, cover it, and let it simmer for 15 minutes
  • When done cooking, serve the mujadara on a plate and garnish with caramelized onions
  • Enjoy with your favorite salad (or make my tomato & cucumber salad) and/or yogurt
Helpful Tip: Use lentils that require 15-20 minutes of cooking time
