Egg Veggie Wrap

This is one of my go to meals for breakfast on busier days. It comes together very quickly and is very customizable. I usually use kale, radishes, and green onions but you can definitely replace these with your favorite veggies!

Ingredients
  • ​1 whole grain tortillas
  • 1 cup kale (medium chunks)
  • 1 1/2 tsp. olive oil
  • 1/2 tsp. apple cider vinegar
  • Salt & pepper to taste
  • 1 hard-boiled egg (small bites)
  • Salt, pepper, & ground cumin to taste
  • 1 green onion (small dice)
  • 1 radish (thin slices)
Servings: 1
Prep Time: 10 min
Directions
  • ​Massage the kale with 1 tsp. oil, vinegar, salt & pepper
  • Spread the kale on the tortilla
  • Gently toss the egg with salt, pepper, cumin, & 1/2 tsp. oil
  • Spread the egg on top of the kale
  • Top it with the green onion & the radish
