Quinoa Mujadara

Mujadara is a very popular Middle Eastern dish that is typically made with lentils, white rice or cracked wheat (less common), caramelized onions, a few spices & water. ​It is a nutritious, delicious, economical, & sustainable dish. 

The star of this dish is the lentils! Legumes such as lentils use fewer resources, build the soil & create affordable & incredibly healthy dishes. For a more nutrient-dense version of this dish, I’m replacing white rice with quinoa. Whenever I cooked & shared this dish with others they raved about its deliciousness!!!

Manaqeesh Za'atar

Manaqeesh Za'atar is a popular Middle Eastern flatbread that is topped with a mix of olive oil and za'atar. Think pizza but with a za'tar topping. The za'atar mix is made from ground up oregano, sumac, toasted sesame seeds, and salt. ​

It's usually enjoyed at breakfast with cucumbers, tomatoes, green onions, radishes, olives, and a cup of tea. Works well for lunch or for sharing at social gatherings.

I prepared this summer salad for a 4th of July friends' gathering, and let me tell you it was a hit! It is a very festive and fresh salad that can be thrown together quickly! The sweetness of the watermelon combined with the saltiness of feta cheese, the crunchy cucumbers, and the mint notes bring together a fun, nutritious, and delicious salad.
